P-Town Paloma sotol cocktail with grapefruit and mint

P-TOWN PALOMA

A Provincetown patio twist on the paloma. St. Germain, lime and white grapefruit.

INGREDIENTS

  • 2 oz Los Magos Sotol
  • .5 oz St. Germain
  • .5 oz fresh lime juice
  • Top with white grapefruit juice and a splash of club soda

Named for Provincetown, where it turned into a patio standard. It's a paloma with elderflower in it, and white grapefruit instead of the pink or the soda.

What you need

  • 2 oz Los Magos Sotol Blanco
  • .5 oz St. Germain
  • .5 oz fresh lime juice
  • White grapefruit juice, to top
  • A splash of club soda

How to make it

  1. Add the sotol, St. Germain and lime juice to a glass with ice.
  2. Top with white grapefruit juice.
  3. Finish with a splash of club soda.
  4. Garnish with a grapefruit wedge and a mint sprig.

Why sotol works here

St. Germain is sweet and heavily floral, and it takes over most drinks it goes into. Vodka disappears against it and gin doubles down on the perfume.

Sotol pulls in the other direction. The pepper and the faint smoke in our Blanco give the elderflower something dry to sit on, and white grapefruit is less sweet than pink so the whole drink stays crisp. The mint reads clean rather than candied.

Pink grapefruit instead?
It works, though it's noticeably sweeter. Add another quarter ounce of lime if you go that way.
