Sotol (pronounced "so-TOLL") is distilled from the Desert Spoon plant, not agave. It grows wild across the Chihuahuan Desert of Northern Mexico and takes roughly fifteen years to mature. Like Champagne, sotol is protected by a Denomination of Origin.

Wild-harvested, roasted in a volcanic rock-lined pit over mesquite, oak and poplar, fermented in open air with deep well water, and triple distilled in copper stills. 100% sotol, sourced ethically and sustainably, with no additives at any stage.
